recipe for ropa vieja in crock pot

I have been addicted to allrecipes.com and loving it, I’d submitted a recipe and was excited about it being on—EXCEPT that they CHANGED my recipe A LOT, so for anyone who might be interested:
1-2 pounds of pot roast type beef
1 can of tomato paste
2 green peppers
1 red pepper
1 yellow onion
1 sweet onion
3 garlic cloves
1/4 -1/2 cup red wine vinegar or dry wine
garlic salt
garlic powder
seasoning salt
stab the meat to let the flavors sink in and to soften the meat
cut the peppers and onions into eighths
pour in the tomato paste and red wine vinegar or wine
toss in the meat and flip to coat
throw in the peppers and onions
sprinkle liberally with spices to your taste
cook on low for 7 to 8 hours
note: the meat will get hard and feel overcooked before it gets super soft and perfect
open crock pot and pull meat apart with 2 forks, stir (by this time there should be a good ammount of sauce)
cook another 1 to 2 hours
enjoy
can also add shredded carrots and/or a couple of bay leaves
